Date and Oat Bites

Four things in a bowl, rolled while you wait for the kettle. Soft, salty, and gone by Thursday.

Ingredients

  • 200 g / 1¼ cupspitted Medjool dates, packed
  • 120 g / 1½ cupsrolled oats
  • 80 g / ⅓ cupnut butter, or tahini
  • ¼ tspfine salt

Method

  1. 01

    If the dates are firm, cover them with hot water for five minutes, then drain.

  2. 02

    Chop the dates to a paste with a knife, or mash them in a bowl with a fork. A processor is faster. It is not required.

  3. 03

    Stir in the oats, nut butter and salt until the mix holds when you squeeze it.

  4. 04

    Roll into 16 small balls. If it sticks, wet your hands.

  5. 05

    Chill twenty minutes if you can wait. They eat well either way.

Dates that are too dry. Soak them in hot water for five minutes, then drain well, or the mix will not clump.
Allergens
Tree nuts, unless you use the substitution. Gluten-free if the oats are.
Substitutions
Tahini or sunflower seed butter in place of nut butter. The bites stay together and no one at the table has to ask.
